2_06280 CARAMELIZED PORK RIBS with orange INGREDIENTS for 4 PEOPLE 1 kg of pork ribs already cut, 3 oranges, 75 g butter, 2 bunches of green onions, 2 leeks, onion, a teaspoon of sugar, a pinch of cumin, 5 tablespoons soy sauce, 2 tablespoons of olive oil, a piece of fresh ginger, salt, pepper. Slightly salted each rib. Squeeze the oranges and pour the juice into a bowl. Keep aside a zest for the final seal. Peel the ginger and cut into thin slices. Add the orange juice. Join the spring onion previously cleaned, pour the soy sauce and teaspoon sugar. Sprinkle with Cumin and add the olive aolio. Stir thoroughly. Dip the pork ribs, making sure they are covered by the marinade liquid. Cover with foil and keep in the refrigerator for about 2 hours and, occasionally, mix the meat so that waste paper for good. Peel leeks and onion, previously washed. In a saucepan melt the butter and sauté over high heat vegetables, without ceasing to stir. Add salt and pepper. Then simmer for about 10 minutes abbasando the flame: the vegetables should be crisp. Drain the meat from the marinade sauce and place them on the grill of the oven already warm at 180° for about 20 minutes, Cook, rigirandole to 1/2. Strain the marinade and pour into a saucepan: bring to a boil and cook until the sauce has reduced by half and has the consistency of a syrup. When cooked, place the pork ribs on a serving dish, nappate with the sauce, you are also the menestra and garnish with the orange zest. Serve.
