Pork Rinds with beans
Instructions
Boil the beans by placing them in cold water, after they are soaked overnight in plenty of warm water. In a second Bowl, place the pork already washed, scraped, and fiammeggiate, an onion, a stick of celery and a clove of garlic. Cover with cold salted water and place the pot on the stove, simmer the pork.
In a separate saucepan, sauté the bacon, butter, two tablespoons of olive oil, the onion, celery and carrots, all previously chopped, flavored with a hint of spices.
Brown, then add the drained beans and the pork cooked and cut into strips, wet with a ladle of the cooking broth degreased, thinned with a bit of tomato sauce. Let boil at moderate heat for about 30 minutes and serve then prepare well.
