Parcels with eggplant

06307 FAGOTTINI with AUBERGINES INGREDIENTS 4 PERSONS 8 slices of veal, 400 g Sugoleggero tomatoes and eggplants, 80 g of cooked ham, 4 slices of bread, butter, 50 g of grated Parmesan, flour, basil, oregano, white wine, extra virgin olive oil, salt and pepper.

Add the Parmesan cheese, a little oregano, salt, pepper and spread the mixture on the slices of meat.
Roll up the rolls and then stop it with a couple of toothpicks.
Sprinkle with flour and saute it in butter and oil.
When they are golden, add half a glass of wine and after that it will be evaporated, add the Tomatoes and eggplant Sugoleggero, salt and pepper.
Add a sprig of chopped Basil and cook for 10 minutes.
Serve warm well.
