Vegetable stew with beans

05379 VEGETABLE STEW with BEANS INGREDIENTS 4 PEOPLE 300 g boiled peas, 300 g of boiled beans, artichoke hearts 8, 50 g of lean ham, 1 onion, 1 glass of white wine, a sprig of parsley, some basil leaves, extra virgin olive oil, salt and pepper.
Peel the artichokes and boil them in salted boiling water with lemon juice, drain and cut into thin wedges.
In a saucepan, stewed onion finely sliced broad beans and boiled peas and artichokes.
Wet with white wine and let evaporate raising the flame.
Add the parsley, with and continue cooking over low heat for about 20 minutes, stirring occasionally, adding a ladleful of water if it was necessary.
After cooking, season with salt and pepper and serve with a drizzle of raw oil.
Presented in table after sprinkled with chopped fresh basil.
Served hot.
