Lamb with asparagus
Instructions
Brown the lamb into pieces with 40 g butter, salt, pepper, add a bit of thyme and basil and sprinkle with 1/2 glass of wine.
Cook over low heat for 50 minutes.
Sauté the garlic with 2 tablespoons oil and 20 g of butter, remove it, then add the asparagus and cook for 10 minutes.
Join us, along with a little lemon juice, already cooked meat and cook for 6 minutes.
Remove from heat, stir in the egg yolks and serve.

- 1000 g of abbacchio
- 2 cloves of garlic
- Dry white wine
- 1 lemon
- Thyme
- Basil
- 2 egg yolks
- Olive oil
- Butter
- 500 g of frozen asparagus tips
