RAVIOLI with BORAGE 03541 4 PERSONS INGREDIENTS for the dough: 300 g flour, 3 eggs, salt. for the filling: 500 g of boiled Borage leaves, 200 g boiled chard, 3 tablespoons extra virgin olive oil, 1 onion, salt and pepper, 200 g of ricotta cheese, grated Parmesan cheese. for seasoning: melted butter, Sage, parmesan cheese. PROCEDURE Prepare the dough to the dough and let it rest covered for 30 minutes. Meanwhile, saute the chopped onion in the oil, add the Chard and chopped Borage, let dry, add salt and pepper and let cool. Then the ricotta cream. and plenty of Parmesan. Roll out the pastry and place in spaced dollops of dough slightly. Put the remaining pastry, press to close and take finally the ravioli. Boil them in plenty of boiling salted water, drain and toss with melted butter flavored with Sage. Serve with grated Parmesan.
