Instructions

PAPPARDELLE EVE 03848 INGREDIENTS for 4 PEOPLE 300 g pappardelle or maltagliati fresh egg pasta, 100 g fresh ricotta, 4 anchovy fillets in oil, 20 g of walnuts, 2 cloves garlic, 4 tablespoons of olive oil, 30 g of grated Parmesan, salt, pepper, chives.

Peel the garlic and cut them in two.

Chop the anchovy fillets and scaldateli together with the garlic in a pan with olive oil.

Let it cook on medium heat until anchovies and discarding the garlic becomes Golden.

Meanwhile, boil the pasta in salted water.

The cooking time varies depending on the type of pasta used: just over a minute to the fresh homemade pasta and a few minutes for that industry.

Discard the garlic and add the ricotta cheese into the pan.

Turn off the heat and dilute it all with two or three tablespoons of pasta water.

Drain the pasta and throw it in the pan.
