01001 CABBAGE and BROCCOLI FLAN INGREDIENTS 4 PEOPLE 1 small cabbage, broccoli 400 g, 50 g of grated Gruyere, 200 cc.

milk, 4 eggs, 1 tablespoon butter, salt and pepper Boiled cabbage PROCEEDINGS and broccoli, separated into sprigs, in salted water, drain and mix the cabbage with a wooden spoon, keeping aside the broccoli that reduce into small pieces.

Beat the eggs, seasoned with salt, pepper, add the grated Gruyère and milk, add to cabbage and mix well all the ingredients.

Put this mixture into a mold from previously buttered flan having attention of intervallete the dough with pieces of broccoli.

Cook in the oven for 40 minutes in a Bain-Marie.

Turn the mold onto a plate when it is still warm.

You can serve the pie with a hollandaise sauce.

Hollandaise sauce 100 g of butter, three eggs, a tablespoon of lemon juice, salt and white pepper.

In a saucepan, put a tablespoon of water and lemon juice, egg yolks, mix well and cook in a double boiler, add the butter chunks, stirring continuously as required to get a creamy sauce.
