Tartlets with ham foam

00357 TARTELLE with HAM MOUSSE INGREDIENTS for 4 PEOPLE 120 g flour, 1 teaspoon of grated Parmesan, 60 g butter, 1 beaten egg, salt, 120 g of milk, 3 tablespoons grated Gruyere, 60 g of finely chopped cooked ham, salt, pepper.
The PROCEEDINGS sift the flour, mix in the cheese and knead it with butter.
Make a recess in the Center, get the egg and salt and knead.
Let it firm up in the refrigerator.
Roll the dough into a thin sheet, between two floured pieces of film; cut circles and foderatene moulds from small pastries.
Prick the bottom and cook for 10-15 minutes in the oven at 200°; Let cool.
Melt 30 g of butter.
Add a tablespoon of flour and cook for one minute, stirring well.
Built into the boiled milk, until the sauce is thick.
Mix in Gruyere, ham, salt and pepper.
Spread the mixture into small pastries, sprinkle them with Parmesan and put them in the oven for another 5 minutes.
