Cherry vinegar
Instructions
The mortar crush cherries and raspberries (Hazel).
Stir in the brandy and spices and bring to a boil slowly, allow to cool, pour into an airtight jar, stopper.
Leave to marinate for 1 month.
Filter the alcohol.
In a wooden barrel, pour the vinegar, add the mother and let stand for 4 days.
Pour the brandy and Cherry, must not be tightly capped, but so that air can escape without dust or insects from entering.
Store in a warm place 3-4 months before consumption.
Ingredients and dosing for 4 persons
- 500 cl of spirits to 45 degrees
- 200 cl of kirsch
- 1000 g of black cherries
- 1000 g of cherries agre
- 250 g of raspberries
- 3 sticks cinnamon
- 15 clove
- 500 cl of grappa
- 100 cl of wine vinegar
- 20 cl of mother of vinegar
