Clean, empty and wash the fish.
Arrange in the bottom of a baking dish a thick layer of salt.
Carefully place the fish and fit very well with salt.
Bake at 200 degrees for 30 minutes.
Smash the crust of salt (the meat will be moist and soft) be divided into fillets and drizzle with oil.
