Scale and the hen sfilittare it apart, pass it in a pan with oil from the skin.
Make an emulsion of raspberries, Gaeta olives crushed, salt, oil and vinegar, then strain the juice, put it aside.
Peel an orange to live and make slices.
Serve with orange slices in layers with the filling, and topped with strands of chives and olives and fresh salad leaves.
