Beef Entrecote with Mandarin Granita and Rum (Entrecote di Vitellone con Granita di Mandarini e Rum)
Instructions
Sear the beef in a skillet with olive oil and aromatic herbs.
In trattempo in a working salt container with white wine and rum (and 1 egg yolk to bind the mixture).
Cover with meat mixture and bake for 19 minutes at 180 degrees.
Blend ice with tangerine juice, rum and sugar gradually.
Serve the granita with meat.

- 250 g of beef entrecote
- Mixed herbs
- White wine
- 1 egg whites
- Little of rum
- Coarse salt
- 2 mandarins
- 1 teaspoon of sugar
- Olive oil
- Salt
- Pepper
