Croxetti with stracchino and clams and basil foam
Instructions
Open the clams in a pan with a little oil, garlic and water; collect fruit and strain the broth.
Dissolve stracchino in a frying pan with a little hot broth and milk.
Croxetti Cook in boiling salted water, drain them and giving them with the cream of stracchino.
Add the clams and serve with Basil Smoothie with cold butter, olive oil and the remaining seafood broth.
