Spinach Soup (Zuppa di Spinaci)
Instructions
Boil the spinach, cut, diced potatoes and carrots.
Pour the vegetables, broth, chopped dill, salt, pepper and the tomato puree in a pot.
Bring to a boil and cook for 1/2 hour.
Combine the sugar and lemon juice.
Garnish with chopped boiled egg yolks.

- 300 g of frozen spinach
- 150 cl of broth
- 100 g of tomato paste
- 2 carrots
- 2 potatoes
- 1 tablespoon of chopped fresh dill
- Salt
- Pepper
- Lemon juice
- 1 pinch of sugar
- 2 egg yolks
