Spelt and vegetables soup

Wash well spelt, it is important to remove all the powder that is located on the grains, otherwise when you bring it to a boil creates a patina on the surface of the water, causing a similar effect to boiling milk.
Leave the farro to soak for at least 6 hours and cook for half an hour.
The cooking time depends on the freshness of spelt: for what I had I enough 20 minutes of baking.
Add the vegetables and cut into pieces, along with the bay leaf.
Completed cooking and, when serving, enrich the soup with chopped parsley, tamari (a few tablespoons) and oil.
