Instructions

Keep soaking the beans overnight.

Then boil them in one liter of water.

In another pan, add the bacon, a clove of chopped garlic and chives, add a quart of cold water and barley.

Simmer very slowly for 2 hours.

At this point add the beans with their cooking water, two tablespoons of tomato paste, chopped potatoes.

Adjust salt and pepper.

Cook for an hour.

Serve the hot soup and finish with a drizzle of olive oil.
