Braised dei gonzaga
Instructions
Put the meat in a pan, butter, onion or shallots sliced thin, cloves and cinnamon.
Saute over high heat, then sprinkle with a little broth (also of dice) and cook covered for about an hour.
Deglaze with the wine, dusted with pepper.
When the wine has evaporated, add the cream, season with salt and finish the cooking.
Pass the broth through a sieve and pour over sliced meat.
Accompany with mashed potatoes.

- 900 g of beef
- 50 g of butter
- 1 onion (or shallots)
- 2 cloves
- Cinnamon powder
- 1/2 cup of dry white wine
- Cream
- Salt
- Pepper
