Logs the meat with bacon.
Chop the vegetables, seasoning them in oil and butter; Add the meat and when it is well browned wet with a little red wine; Let it evaporate, add salt and pepper; Add a bit of hot water and bake in covered pan two hours.
Bear in bathroom plums in the remaining wine.
Halfway through the cooking of the meat add the plums with their liquid.
Serve the hot braised, diced, nappate with plum sauce.
