Surprise soup
Instructions
Clean onions, cut into thin slices and fry with the garlic in olive oil in a pan.
Add the vegetables cut into small pieces.
Add salt and pepper and then add 1 quart of water.
Cook for 30 minutes.
Pour one at a time, in egg soup pan, taking care not to break them.
Cook for 4/5 minutes.
With a ladle pour the soup and an egg is poached in each bowl.
Cover the egg with a slice of cheese and serve.

- 4 eggs
- 4 carrots
- 4 ribs of celery
- 2 potatoes
- 1 onion
- 2 cloves of garlic
- Olive oil extra virgin
- 4 slices of sottiletta cheese
- Salt
- Pepper
