Neapolitan zucchini
Instructions
Wash, trim and cut Zucchini into cubes.
Chop garlic and onion and saute in 1/2 cup of oil.
Add the tomatoes peeled and cut into pieces and cook for 5 minutes over high heat.
Add the zucchini, salt, pepper and cook with the lid on for 30-40 minutes.
If necessary add a little hot water.
Before serving add the chopped Basil.

- 4 medium zucchini
- 1 onion
- 2 ripe tomatoes
- 1 clove of garlic
- Basil
- 1/2 cup of olive oil
- Salt
- Pepper
