Greek zucchini
Instructions
Peel the onion and chop finely.
Peel the garlic and crushing.
Heat the oil in a saucepan and fry the onion and garlic.
Add the tomato paste, 15 cl of water, wine, thyme, Bay leaves, coriander and pepper.
Savoury Pies.
Bring to the boil.
Cover and let simmer for five minutes.
Peel the squash, wash them, dry them, cut them into four lengthwise and then cut them into pieces.
Add the zucchini in the Pan and let it simmer for about thirty minutes.
Pour the zucchini in a pot.
Let cool and then let marinate for 2 hours in the refrigerator.
When serving, remove the thyme and bay leaf.
Add the oil and lemon juice.
Stir and sprinkle with parsley.
Ingredients and dosing for 4 persons
- 700 g of small zucchini
- 5 tablespoons of olive oil
- == 1 large onion
- 1 clove of garlic
- 15 cl of dry white wine
- 2 tablespoons of tomato paste
- 1 sprig of thyme
- 1 leaf of laurel
- 12 coriander seeds
- 12 grains of pepper
- Salt
- To serve:
- 2 tablespoons of olive oil
- 2 tablespoons of chopped parsley
- 2 tablespoons of lemon juice
