Zucchini rice
Instructions
Boil squash in salted water, drain, let cool and cut into half lengthwise.
Place the zucchini in a tray.
Slice the half an onion and Brown it in 50 g of butter; then add the rice and sprinkle with half a glass of white wine and finally the tomato.
Every now and then add water.
After cooking, add 20 g of butter and chopped parsley.
Meanwhile, in a Pan fry in a little olive oil and sliced mushrooms.
Then add chopped parsley.
Served by putting in half the rice and Zucchini topped with strips of pepper and baked with mushrooms.

- 600 g of zucchini
- Salt
- 1 box of peeled tomatoes
- 70 g of butter
- Parsley
- 1/2 onion
- 1/2 cup of white wine
