Xihongshi chao jidan
Instructions
Fry the oil and then add the beaten eggs.
When it was formed the omelette, remove from the Pan and set aside in a bowl.
Fry the garlic with ginger and chives, then add the tomatoes, cut into large wedges.
Saute and add 1 teaspoon of salt and 1 tablespoon sugar.
Finally, add scrambled eggs.

- 3 eggs
- 3 tomatoes
- 1 clove of garlic
- Ginger
- Frying oil
- 1 teaspoon of salt
- 1 tablespoon of sugar
- 1 handful of chives in clumps
