Cheese wafers
Instructions
The doses given are for ten wafers.
In a bowl mix the eggs in foam with soft butter and a pinch of salt, incorporating an egg at a time, alternating with a little flour.
If you want to make softer the dough separate the egg yolks from the whites, then worked the top with butter.
Later add the clear Mount Snow, alternating with the flour sieved.
Add the grated cheese, yeast and paprika, pour the milk and mix with a wooden spoon until mixture is smooth.
Spread the dough in spoonfuls on a special plate for wafers, oiled, and cook for about 2 minutes at 200 degrees.
Remove the waffles with a fork and continue in the same way until the dough.

The ideal is to serve them hot and fresh, fragrant, however they are also very cold and filled with a tangy cream cheese-based.

- 200 g of butter
- Salt
- 4 eggs
- 200 g of flour
- 1/2 teaspoon of yeast
- 80 g of grated emmenthal cheese
- 1 teaspoon of spicy paprika
- 8 tablespoons of warm milk
- Olive oil for the griddle
