Instructions
Clean the fish and fill it with chopped onion and fennel and 3 tablespoons olive oil.
Pour into a baking dish 1000 g of salt, lay the fish and cover with the remaining salt.
Put in oven at 180 degrees for 50 minutes: salt must form a hard crust that you break when cooked.
Pull gently the fish, season with oil and serve
