Baked branzino in salsa
Instructions
Clean and wash the fish, rub inside and out with salt.
Pounded in a mortar the thyme with garlic and a few grains of pepper, then rub the inside of the fish with this mixture.
If the cut made to clean it up is very large wire from ricucitelo kitchen, then place the fish on a sheet of aluminum foil, seasoned with olive oil and close the edges leaving the tubular bag soft so that it stays on the air inside.
Place the bag in a baking dish and bake for 40 minutes.
In the mortar mix walnuts, lemon juice and a pinch of chilli until you obtain a homogeneous sauce.
Remove the fish from the foil and place on a serving dish; serve accompanied with the sauce separately.

- 1 branzino from 1500 g
- 15 cloves of garlic
- 2 lemons
- 120 g of nuts
- 6 sprigs of thyme
- 25 cl of olive oil extra virgin
- Coarse salt
- Some grains of pepper
- 1 pinch of chili powder
