Vermicelli with fresh anchovies
Instructions
De-boned the anchovies, wash them and leave them open to dry on a piece of paper.
In a Pan fry the garlic rather broad with oil and Add finely shredded parsley.
Put into the pan the anchovies and cook for 3 minutes, stirring.
Remove from heat and add the vermicelli noodles that have boiled in salted water (well drained al dente).
Sprinkled with a mixture (previously prepared) breadcrumbs, pecorino cheese and freshly ground black pepper.
Jump fast all on fire and quickly slices as noodles will tend to stick to the bottom.
Before serving, garnish with parsley leaves.
Ingredients and dosing for 4 persons
- 400 g of vermicelli type noodles
- 300 g of fresh anchovies
- Some cloves of garlic
- 1 sprig of parsley
- 2 tablespoons of breadcrumbs
- 2 tablespoons of grated pecorino cheese
- 10 cl of olive oil extra virgin
- Salt
- Black pepper
- For garnishing:
- Some leaves of parsley
