Eggs with asparagus (2)
Instructions
Clean the asparagus and tie it up to the deck.
Water filled a high and narrow pot, plunge the asparagus upright so that the tips remain out and cook.
When boiled, are on average after about 20 minutes, then drain them and arrange them on the serving dish, half on one side and half on the other with the points that you touch.
Grated cheese and sprinkle with 40 g of melted butter.
Dissolve 40 g others in a pan and sgusciatevi an egg at a time, add salt and cook until the egg white has curdled.
Lift the eggs with a perforated scoop, dry on a towel and place in the Centre of the plate over the asparagus tips.
