Instructions

Boil for 30 minutes in water 1 onion 150, 1 bay leaf, 1 sprig of parsley 10 peppercorns, and many scraps of fish (fish bones, heads, tails).

Strain the broth and place it back to fire.

Combine 2 egg whites, beaten until foamy and after 5 minutes filter again and add salt.

Bring to a boil again and cook for 4 minutes 400 g fish fillets (sea bass, sole and COD).

Drizzle with 2 teaspoons chopped parsley 1 lemon and peeled and sliced thin.
