without scapati boss, there is always someone who qualifies "escaped" and having the birds took flight, it had to replace them as best we could.
Is that the way to cook these pieces is the same that you follow for sparrows and quails and all edible birds.
Take slice the meat (it must be very tender), beat her, add salt and pepatela.
Distributed over each nibble a few Sage and a slice of bacon or fat and lean ham.
Roll them up on themselves, and strung these meat rolls on cocktail sticks combined together in twos, inframezzandoli with a slice of bread and Bacon and a piece of liver.
Align these spring rolls on a baking tray, spray them with oil, salt and pepper and sprinkle with juniper berries pounded roughly.
Cover and cook in the oven already warm.
When cooked, remove the rolls from the Pan and accomodateli in a heated serving dish.
Put the pan back on the heat and, when hot, peeled off the cooking with a dash of dry white wine.
Passed quickly in this gravy a knob of butter soaked flour; pour the hot sauce over sticks and serve.
Ingredients and dosing for 4 persons
- 16 slices of veal breast
- 100 g of rolled bacon
- 100 g of bacon cut in one piece
- 1 thick slice of liver
- 1 sprig of sage
- 1 dash of dry white wine
- Some berries of juniper
- Bread
- Olive oil
- Salt
- Pepper
