Wash, clean and dry the trout.
Season with salt, pepper and place them in a baking pan with 50 g of butter and two Sage leaves.
Cook for 15 minutes.
Beat the eggs with salt, pepper and lemon juice.
Pour the mixture over the fish and bake for another 8 minutes.
