Old-fashioned tripe
Instructions
Buy the tripe already boiled and cut into strips or prepare it at home.
Chop vegetables and slightly brown with a little olive oil extra virgin olive.
Stir frequently and add the tripe.
Wet with wine, add salt and pepper and let it evaporate.
After a few minutes add the tomatoes.
Cover the Pan and continue cooking over low heat.
Extend, if necessary, with the broth.
