Zucchini Patties (Tortini di Zucchine)
Instructions
The following dosages are for eight trays of 11 cm in diameter.
With the listed ingredients prepared a salted pastry according to the recipe.
Roll out the dough in greased pans of eight butter and cook to white.
Carefully wash the zucchini and cut into thin slices.
Scalded tomatoes in boiling water, Peel, take away the seeds and cut flesh into cubes.
Mix in a bowl the cream, eggs, cheese, paprika, salt and pepper, then roll out pasta shells in a portion of the mixture and put over regular slices of courgette and tomato cubes.
Finish filling the rest of the cheese mixture, then cook the patties in oven at 200 degrees for about 20 minutes.
Remove when they are well browned, sprinkle them with the chopped parsley and serve.

- For the dough:
- 250 g of flour
- 125 g of butter
- 1 egg yolk
- Salt
- 2 tablespoons of d'acqua
- Butter for the baking pans
- For the filling:
- 400 g of zucchini
- 6 tomatoes
- 25 cl of cream
- 2 eggs
- Salt
- Pepper
- 1/2 teaspoon of paprika
- 100 g of montasio cheese, grated
- 100 g of grated parmesan cheese
- 1 sprig of parsley
