Madeleine cake
Instructions
The doses indicated are for a pan of 26 cm in diameter.
Put on a marble floor butter, softened and cut into pieces, marzipan and a third of sugar and roll them into balls with a spatula until mixture is smooth and homogeneous.
Place it in a casserole, flavour it with the stick of vanilla, then add one at a time, the egg yolks.
Knead the dough for a long time and only when it is swollen and carefully fold the egg whites foamy, mounted egg whites along with the rest of the sugar, potato starch and flour.
Grease a fluted mold, sprinkle evenly with bread crumbs or bread crumbs pan of Spain, then put the dough preparation and livellatene the surface with a spatula.
Bake the cake in the oven at 190 degrees for 50-60 minutes.

- 250 g of butter
- 100 g of marzipan
- 140 g of sugar
- 1/2 stick of vanilla
- 6 egg yolks
- 6 egg whites
- 120 g of flour
- 80 g of potato starch
- Butter for the pan
- Breadcrumbs for the pan
