Carrot cake (2) (Torta Alle Carote (2))
Instructions
Wash the carrots, dry and finely cut.
Beat the egg yolks and beat them with sugar and a pinch of salt.
Meanwhile, mix the flour with the yeast, and add the beaten egg.
Pour minced almonds also, grated carrots and brandy.
Whip the egg whites until foamy and add them to the mixture.
Then place the whole thing into a well buttered and sprinkled with breadcrumbs and bake in hot oven at 200 degrees for about an hour.
Prepare the glaze: mix the icing sugar, rum and lemon juice and cover the cake after it has cooled.
