Nougat with walnuts and figs
Instructions
The ingredients are for 1 nougat.
Boil the honey and continue cooking in a Bain-Marie.
When the honey will have a whitish color, add the whipped egg whites and continued firing.
When the honey is hardened (do the test by inserting a toothpick soaked) join one of its regular chopped nuts, cinnamon and grated lemon peels.
When the mixture will be quite compact, pour it on a chopping board or marble greased with almond oil and try to give it a rectangular shape about 1 cm.
Then cool the dough and cut it into pieces, always coil them with silver paper and place them in a tin box.

- 600 g of dried figs
- 1500 g of honey
- 600 g of walnut kernels
- 400 g of sugar
- 4 egg whites
- Sweet almond oil
- 1 lemon
- Cinnamon
