Thrushes in salmì
Instructions
Clean the thrush, salt and cook on a spit or in the oven.
Once cooked, remove the heads and bone 2 thrushes.
Pound in a mortar.
In a saucepan Cook slowly for 30 minutes in olive oil, chopped ham, juniper berries, crushed a ladle of broth, a dash of marsala; filter through a sieve and put the proceeds in a pan with the pounded mash.
Mix; make you flavour the thrush for 10 minutes.
Serve with slices of toasted bread.

- 8 thrushes
- 50 g of ham
- 50 g of olive oil extra virgin
- Some of juniper berries
- 1 dash of dry marsala wine
- Some slices of bread
- 1 ladle of broth
- Salt
