Olive thrush
Instructions
Clean the thrush (foodies prefer not to drain them of entrails) put them in a saucepan with half an ounce of butter, salt and sauté over high heat; just took color lower the heat and continue cooking at medium heat.
Finely chop the onion, celery, carrot and Medulla, put them in a saucepan and sauté them with the remaining butter.
Combine mincemeat, seasoning, stirring well, add chopped tomatoes (remove the seeds), add salt, pepper, stretch with a bit of broth and cook the sauce for half an hour; add most of the whole and the remaining olives pitted and chopped (or pounded in a mortar).
Cook the sauce for about 10 minutes; arrange the thrushes on a platter, sprinkle with the sauce and serve.

- 70 g of butter
- 100 g of black olives
- 100 g of lean minced beef meat
- 30 g of medulla
- 1 costa of celery
- 1 carrot
- 1/2 onion
- 2 peeled tomatoes
- Little of meat broth
- Salt
- Pepper
