Pan Dell'Orto
Instructions
Put in a bowl of cold water, then add the juice of one lemon.
Clean the artichokes by removing the outer leaves and tips, the hardest part of the stems.
Cut them into wedges, remove the hay and put them to soak in salted water.
Cut peeled onions slices not too thin.
Drain artichokes, dry them and put them in a pan with onions, a few tablespoons of oil and the clove of garlic peeled.
Add salt, cover the Pan and cook over a medium flame for about 10 minutes until the artichokes and onions are cooked but still crunchy.
During cooking, if necessary, add a few tablespoons of hot water.
Throw garlic and transfer artichokes and onions in a separate dish.
Add at the bottom of the baking pan a splash of wine and cook.
Add a teaspoon of sugar, a pinch of salt and a handful of Marjoram leaves.
Mix well until sugar has dissolved, then place the artichokes and onions to the Pan and gently turn them over with the seasoning to season.
Serve hot or still warm.

- 8 artichokes
- 4 red onions
- 1 lemon
- 1 clove of garlic
- 1 handful of marjoram leaves
- A few tablespoons of olive oil
- 1 splash of dry white wine
- 1 teaspoon of sugar
- 1 pinch of salt
