Before grease the bread slices, then spread them with a little mayonnaise.
Cut the tomatoes (choose not too ripe) in eight washers, put one on each slice of bread, sprinkle with a little salt and the chopped egg white and the yolk crumbled.
Arrange the canapes on a serving platter and serve.
