Chopped lamb bolognese
Instructions
Fry the lard and oil, throw the pieces of lamb and sauté them alive heat from both sides.
Drain almost all the fat, pour in the butter, then add the tomato, salt, pepper and continue cooking at medium heat for 20 minutes.
Serve immediately.

- 1000 g of lamb (cosciotta or shoulder) to pieces
- 50 g of chopped bacon
- 2 tablespoons of olive oil
- 30 g of butter
- 500 g of tomato puree
