Instructions
Pour the tapioca flour in the broth to a boil.
Stir because it does not form lumps, add salt and cook for 10 minutes or so.
Serve with grated cheese.
If desired, before you bring to the table a few tablespoons of cream.

Another variation is the addition of lettuce: cut three or four salad leaves into strips, ammorbiditele over low heat for a few minutes with a knob of butter, mix together the tapioca when it is halfway through the cooking.
