Lamb in tasty sauce
Instructions
Soffriggi (possibly in a crock) beaten of garlic and parsley with oil or butter.
When imbiondirà, lay the lamb into pieces flour dusted and Brown over medium heat.
Dust with salt and pepper, wet with white wine and, when evaporated, add the anchovy fillets minced and cream.
Mix well and continue cooking at low heat and cover pan.
After 1/4 of an hour to blend the sauce and lemon juice, mix and let Cook adding a little broth if necessary.
When cooked, blend the sauce grated lemon rind, if you like the taste, and serve hot with mashed potatoes.
Ingredients and dosing for 4 persons
- 1000 g of forequarter of lamb into chunks
- 50 g of butter
- 2 tablespoons of olive oil
- 4 tablespoons of flour
- 1/2 lemon (juice)
- 1 clove of garlic
- 1 sprig of parsley
- == 1 lemon (zest) (optional)
- 5 anchovy fillets in olive oil
- Dry white wine
- 25 cl of cream
- Nut soup
- Salt
- Pepper
