Italian stew (Stracotto All'italiana)
Instructions
The day before you put the meat in red wine with chopped carrots, onions and a little chopped garlic; turn meat once in a while.
The next day in a saucepan melt butter and oil and add the meat with a little bit of onions and garlic, but no composed of maceration.
When the meat is browned do flambé with the brandy and then pour the mixture of maceration.
Simmer for 2 hours.
Meanwhile, cut the tomatoes into pieces and put them in a pan with fresh onions, carrots, mushrooms, olives, thyme and bay leaf.
Simmer for 2 hours and then add this mixture to the meat, letting it cook for another hour.

- 1500 g of beef
- 4 carrots
- 3 onions
- 1 clove of garlic
- 100 cl of red wine
- 1000 g of tomato
- 10 round carrots
- 1 bunch of fresh onions
- 150 g of black olives
- 250 g of mushrooms
- Salt
- Pepper
- Thyme
- Laurel
- Brandy
