White almond pastries
Instructions
Almonds must be at least 1/3 their skins.
Beat the egg whites with the icing sugar until a paste.
When everything is well fitted, remove some (about 1/4) and add the almonds, cinnamon and grated lemon rind.
Pour the dough on the work surface and form big torches.
Apply with the clear mount, which had been put aside.
Crush them and cut them into pieces of about 3 cm thick.
Place the pastries on a buttered and floured and bake in the oven at 140 degrees, for 15-20 minutes.
Ingredients and dosing for 4 persons
- 500 g of big pieces chopped almonds
- 500 g of icing sugar
- 3 egg whites
- == 1 lemon (zest)
- 1 sachet of cinnamon powder
