Chicken liver mousse
Instructions
Fry the chopped onion in lard.
Add the chicken livers and Sage, salt, and pepper, sauté and wet with brandy.
Allow to cool then mix with the eggs and celery.
Stir in the cream to the mixture and mix well.
Pour the foam into a bowl lined with lettuce leaves.
Serve as an appetizer with bread croutons.

- 6 chicken livers
- 40 g of lard
- 2 leaves sage
- 1/2 onion
- 1 heart of celery
- 2 hardboiled eggs
- 4 tablespoons of unsweetened whipped cream
- Brandy
- Pepper
- Salt
- Croutons
- Lettuce salad
