Scald in two fingers of saltwater fish still frozen spinach, drain and squeeze well.
Melt the butter, then add the diced pancetta and pine nuts, stir and let brown slightly.
Add spinach, make them taste sweet heat, season with salt and pepper.
Serve hot.
