Skewered sarde a beccafico
Instructions
Clean the pilchards, dropped his head and fishbones, open them, wash them and dry them.
Mince the parsley into the mixer with the cheese, the bread crumbs and garlic; put everything in a bowl and add raisins, a spoon of oil and a pinch of salt.
Spread the mixture on the pilchards, roll them up to infilzatele and roll on skewers, alternating with bay leaves and cloves of onion.
In a pan heat 2 tablespoons of olive oil and bake on both sides the skewers for about 10 minutes, add a ground pepper and serve.

- 500 g of sarde
- 120 g of breadcrumbs
- 80 g of seasoned pecorino cheese
- 1 sprig of parsley
- 1 clove of garlic
- 50 g of sultanas
- 4 spring onions
- Laurel
- Olive oil
- Salt
- Pepper
