Instructions

Marinate the meat cut into pieces with wine, oil, carrots, onions, shallots, garlic and herbs; leave for 2 hours.

Then put in a pan and the Bacon rind, which you previously boiled in hot water, and cut it into pieces; above place the pieces of meat and tomatoes, stirring over the marinade sauce with vegetables and add a little water.

Salt pepper and simmer for 3 hours.
